Third-generation New Deal Fish Market owner, Carl Fantasia joins us in the Nibble kitchen for an engaging class that would make Neptune proud. Carl will share his decades of knowledge and experience when it comes to seafood—from sourcing to filleting. We’ll start with a nod to one of the more polarizing of fish: anchovies. We'll put together a mascarpone cheese and pickled peppers starter featuring this scrumptiously salty ocean treat. A quick mixing up of Carl's soy-based marinade will have our main course full of flavor. Then Carl offers the tips and tools on what to look for when purchasing seafood. A nod to his Italian heritage, we'll mix a simple arugla salad and vinegrette as well. We’ll round out our meal by preparing a Fantasia favorite: Brussel sprouts with Furikake: a fish based dry seasoning with seaweed, salt, and sesame seed.
